Happy July! I’m so excited to share with you all that I was featured on the Generation Three Girls podcast! I had posted a granola recipe on my feed, and it just so happened that Mallory needed to make more granola that day! Granola is an easy pantry staple that you can make at home. Not only is it cheaper, but you can also customize it to include your favorite toppings (i.e. not raisins).

Healthy Homemade Granola

An easy pantry staple that you can have on hand!

Ingredients

  • 3 cups instant oats

  • 1/3 cup brown sugar

  • 1/2 tsp salt

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1 cup nuts of choice, finely chopped* (e.g. almonds or walnuts)

  • 1/3 cup agave**

  • 3 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1/2 tsp almond extract

Directions

  • Preheat oven at 350F.
  • In a large bowl, combine oats, brown sugar, salt, cinnamon, nutmeg, and nuts.
  • In a separate bowl, combine agave, coconut oil, vanilla extract, and almond extract.
  • Combine the wet and dry ingredients, mix thoroughly.
  • Spread on a sheet pan (with parchment paper works best).
  • Bake for 10 minutes, then remove and mix the granola mixture. Bake for another 5-7 minutes.
  • Remove from heat, allow to cool completely before storing in an air-tight container.
  • Enjoy!

Notes

  • * You can also add other granola toppings such as coconut flakes, chia seeds, pecans, etc. Keeping the total amount of topping between 1 cup and 1 1/4 cups should keep the granola mixture sticking together.
  • ** An equal amount of honey works if you don’t have agave. However, I find that agave leaves the granola much crispier than honey.
